Grandma Esther’s Organic Blended Shakshuka over Durham Wheat Fusili with Mixed Green Salad (v)


This is a dish of pure comfort for Jenny’s family. Her paternal grandma was a Sephardic Jew & this dish was a staple in her home. She would call it “tomat con queso” which was in effect a blended Shakshuka. This organic tomato & red bell pepper based “sauce” is cooked for hours. Once it boils down it is thickened with fresh local eggs & then loaded with organic crumbled feta cheese. It can be eaten hot or cold but was usually served over a spiral noodle. In honor of grandma we serve it over fusili. VEGETARIAN
